I have just tried out the credit tracker script by Anna Forrest Designs and I have to say that I love it!! It does come in a version suitable for PSE as well.

it is really easy to use, all you have to do is install the script into Photoshop, tell it where to find your scrapbooking supplies and then start creating your layout! Along the way it asks you for the details of the files you are opening (but only once per kit) and then when you are finished it compiles all of your credits for you.
